Go najdov receptot za Boza (blagodarenie na eden cclen od Ajvar.com)
Za site onie koj sakaat eve vi:
Boza (Millet-Ale)
Ingredients:
5 l cups water
2 cups flour
2 cups sugar
1 cups boza or home-made ferment
1-2 tbsp. slightly roasted flour
1 cup tepid water
1 tbsp. sugar
Directions:This is a popular Bulgarian drink typical also of other Balkan countries. The boza is a thick, fermented beverage (containing up to 4 percent alcohol) with a sourish or sweetish taste. The boza is made of various kinds of flour (barley, oats, corn, wheat), but boza of best quality and taste is made of millet flour. Roast slightly the flour (to become rosy in colour). Take care not to get it burnt. Mix it with a bit of lukewarm water. Pour the mixture into the pot filled with the rest of the water and put it on the plate. Add the sugar and leave the liquid to boil stirring it once in a while. Keep boiling for 5-6 minutes still stirring. Remove the pot from the fire and let it cool. Add 1 teacupful of boza or 1 teacupful of the home-made ferment. Leave the mixture in a warm place for 2-3 days to cause firmentation. When the boza is ready, pour it in bottles and store in a cool place (refrigerator). How to make the boza ferment:Mix the slightly roasted flour (take care to keep it from burning) with the water and stir well. Add the sugar. Leave the mess in a warm place for 2-3 days to ferment, stirring it from time to time. Note: The teacupful of boza or home-made ferment can be replaced by 6-7 moistened and crumbled slices of wholemeal bread /or toast/, or by 6-7 spoonfuls of leaven. In this case before storage the boza has to be filtered (without pressing). |

4 medium Navel oranges
1 medium Lemon
3 cup Vodka
1 1/2 cup Superfine sugar
8 drop Yellow food coloring,option
1 drop Red food coloring, optional
1 tsp Glycerine, optional
Rinse and dry the oranges and the lemon. Use the shredding side
of a cheese grater to scrape only the orange part off the
oranges; be careful not to scrape off the white, bitter part.
Scrape the peel off half the lemon in the same manner. Put the
orange and lemon zests in a glass jar; add the vodka. Seal
tightly and let steep in a cool dark place for 3 days, shaking
the jar once a day. Strain the vodka into a bowl, whisk in the
sugar until it dissolves and is clear. Stir in the optional
colorings and glycerine. Pour into a clean glass bottle, seal
tightly, and allow to mature at least 1 week before using. Store
at room temperature.

3 cup fresh strawberries, stemmed and washed (all green tips,
bruises removed)
1 1/2 cup sugar
2 cup 100-proof vodka
1 cup water
1/2 tsp lemon zest
1 tsp orange zest
1 tsp fresh-squeezed lemon juice
Crush strawberries and sugar together in bowl. Let stand for
about one hour. Transfer to clean 2-qt container and add vodka,
water, lemon zest, orange zest, and lemon juice. Cover and let
stand in a cool, dark place for 2 days, shaking frequently. Use a
fine-mesh strainer to strain out solids. Discard. Transfer
liqueur to clean container, cover, and let stand for 1 week. Rack
or filter into final container. Age for at least 1 month more
before serving. Yield: approx. 1 qt.

5 can (16 oz ea) Tart red Cherries Drained and pitted
2 Fresh apples, cored, Qrtrd, and Unpeeled
2 cup Sugar
1 1/2 tsp Allspice
1 1/2 tsp Whole cloves
1 Cinnamon stick
4 cup Whiskey, preferably Tennessee
Combine all ingredients in a 2 quart glass jar. Stir; cover.
Place in a cool, dark place for at least 8 weeks. Stir daily or
several times a week. Strain before serving. Serve in liqueur
glasses.

4 oz of chopped, black walnuts OR pistachio nuts

12 Raisins or currants (optional)
1 1/2 cup of vodka
1/2 cup Sugar syrup
Steed the raisins, nuts and spices in vodka for 2 weeks. Shake
occasionally. Strain and filter. Add sugar syrup. Mature 2-3
weeks.

Jas znam...e sega, dali ubavo kje ti objasnam, kj si procenish sam.
Se vari 1l mleko i se ostava da se oladi malku.
Zemame potkvas-za toa mozhe da ni posluzhi otstoeno kiselo mleko ili pavlaka.
Jas obichno koristam kiselo mleko i togash e potrebno 5-6 lazhici za kolichina od 1l mleko.
Vo sluchaj da se koristi pavlaka, potrebno e pomalku, okolu 2-3 lazhici.Kolku e pokisel potkvasot, potrebna e pomala kolichina.
Temperaturata koga kje go promeshame potkvasot so mlekoto ja odreduvame na ednostaven nachin-probuvajkji so prst, i ako mozheme da ja izdrzhime toplinata togash e momentot da go promeshame potkvasot.
Potkvasot go stavame vo eden sad vo koj dodavame okolu 1 dl od mlekoto, go promeshuvame i ovaa smesha ja sipuvame vo sadot so mlekoto.
Bez da gubime vreme go poklopuvame sadot i go zavitkuvame vo nekoe kjebe, za da se odrzhuva posignatata temperatura.
Posle otprilika 5 chasa kiseloto mleko e gotovo.

Irish coffee
Navodno, go smislil barmenot Joe Sheridan 1943-ta, koga go spremil na Americhkite patnici koi doletale so avion vo maliot Irski grad Limerick.
Vo jako kafe nalil viski i go sazladil so slag, a na prashanjeto "dali e toa Brazilsko kafe?" odgovoril so:"No, that's Irish Coffee!" i taka e stvoreno legendarnoto "pijano kafe"[:D]

Egg nog e eden od trite vrsti na pijalok koi se pripremaat so jajca, potochno so zholchka.Drugite dve vrsti na pijalok chij biten del os sostojkite se flips(so celo jajce) i fizzes(samo so belka).
Vo sushtina postapkata za pripremanje na ovoj pijalok sekogash e ista, samo se razlikuvaat potrebnite sostojki.Site sostojki treba da se stavat vo shejker za koktel i energichno da se mesha.Sepak, so meshanjeto ne treba da se pretera, zatoa shto mozhe da se sluchi pijalokot da stane premnogu redok.
Izmateniot pijalok se sipa vo chashi i ukrasuva so led i ovoshje.

-3/4 crno vino
-1/4 chokoladen liker
1 shtangla narendana chokolada

Tikvata se chisti od ljushpata, mesoto se secka na kockichki i stava vo sad zaedno so 5l voda.Se vari se dodeka ne omekne.Togash se ladi, pasira i se mesha zaedno so sokot vo koj se varela, dodava shekjer, isceden sok od pomarandzite i limontus ili limonov sok, po zhelba.Se mesha se dodeka shekjerot ne se stopi i sipa vo flashi.Se chuva vo fridzider.Ovoj sok mora brzo da se ispie zatoa shto lesno pochnuva da vrie. |
